This is a sweet, floral green tea cocktail that is simple, fresh and refreshing.
First you need to make your green tea and lavender simple syrup which is the flavour base for this cocktail.
Green Tea Lavender Simple Syrup
2 tablespoons of Cup Above Tea’s Himalayan Pine loose leaf green tea
4 tablespoons of dried lavender blossoms
2 cups of sugar
Mix tea leaves and lavender blossoms and top with 2 cups of boiling water. Ordinarily we wouldn’t brew green tea at boiling point but for this recipe bringing out some of the green tea bitterness is desirable for the balance of flavour, and this bitterness is essentially created by scorching the leaves with boiling water.
Leave the blend to infuse for 10 minutes or so.
Once steeped, add to a saucepan with the sugar over medium heat. Bring the liquid to a boil and stir until the sugar granules have totally dissolved. Strain the liquid through a fine sieve and let the syrup cool.
Add 30ml wild honey infused vodka and 30ml green tea lavender simple syrup to cocktail shaker. Fill with ice and shake vigorously.
Strain into a chilled coupe glass. Top the glass with lemonade and garnish with a sprig of lavender.
Makes one cocktail (double or triple quantities depending on how many drinks you need to make).
